(FOX Providence) - We're cooking Beef Flemington withMadeira Sauce in the kitchen with Flemings Prime Steakhouse & Wine Bar.
7 oz veal demi
1 tsp butter, clarified
1 oz (wt) shallots
1 spring of fresh thyme
1 tbs whole black pepper, cracked
1 cup madeira wine
1 tbs corn starch
1 tbs water
1/4 lb butter, lightly salted
Pinch kosher salt
Pinch whole white pepper, cracked
Place clarified butter in a sauce pot set on medium highheat, add rough cut shallots and sauté for 3-4 minutes to alight brown color.
Add Thyme, cracked black peppercorns and Madeira wine, cook toreduce by ¾.
Add reduce veal demi, cook for 8-10 minutes. Combine corn starchand water and cook into the sauce for 1-2 minutes.
Cut butter into ½” dice and whip into the sauce.Strain through a chinoise and place into a 1/6th pan forservice.
Adjust seasoning with Kosher salt and additional fresh crackedwhite pepper.
