We're making a summer pasta salad with tuna with WPRI employee Wendy Curtis.
Ingredients:
2 pickling cucumbers, chopped
1 pint of cherry tomatoes, sliced in half
1 bunch of scallions, chopped
1 box tri-colored rotini pasta
1 can white tuna in water
3/4 cup of light mayonnaise
splash of poppy seed dressing
basil leaves to taste
Steps:
Cook pasta according to box directions.
Meanwhile, chop and assemble vegetable ingredients.
Drain tuna.
After pasta cools off mix all ingredients together.
Top with chopped basil.
