We're making Baked Stuffed Chicken Breast with Cortland Apple Raisin Sauce with Chef Marc Ruggio of Cortland Place.
Ingredients:
4 chicken breast 8 oz
12 oz cornbread sausage stuffing
4 pinches fresh sage
4 Cortland apples
12 oz heavy cream
2 oz flaked butter chips
4 oz raisins
1 ½ oz. brandy
2 oz. celery
2 oz. onion
2 oz. grade A maple syrup
Steps:
Pound out chicken breast with mallet. Stuff chicken breast with cornbread, sage, and sausage stuffing.
Fold into shape. Bake at 350 for 45 minutes or until internal temp is 165 degrees
Steps for Sauce:
Sauté apples until golden brown, deglaze with brandy and maple syrup, add raisins and half & half. Reduce by 1/3 and flake in butter
