We're cooking Chicken Kebabs and a Grilled Chicken Sandwich in the kitchen with Gold's Gym East Greenwich and Pawtucket.
Chicken Kebabs
Ingredients:
1 Chicken Breast Boneless & Skinless
1 Red pepper
1 Vidalia onion
2 Portobello mushrooms
Olive oil
Salt pepper
Skewers
1 pkg minute rice single serve
Steps:
Cut up chicken into 1 inch cubes- Salt and pepper to taste
Cut up veggies into large slices.
Place on skewers alternating between veggies and chicken.
Brush with olive oil.
Place on grill a few minutes each side until chicken is cooked.
Heat up rice in microwave.
Grilled Chicken Sandwich
Ingredients:
1 pita bread
1 Chicken Breast Boneless & Skinless
Lettuce
1 tomato
Mango salsa
1 avocado
Steps:
Grill chicken breast salt and pepper to taste.
Puree mango salsa and a Tbs olive oil to make sandwich dressing.
Open Pita pocket place lettuce, tomato and sliced Avocado inside pour on mango dressing to taste.
Add in 3-5 oz of chicken breast.
