We're cooking Green Pepper Glazed Slow Roasted Coulotte Steak with Julian's Restaurant .
Ingredients:
Green peppercorn infused beef demi glace
Coulotte steak
Red bliss potatos, kosher salt, thyme, rosemary, sage, duck fat
Cippolini onion, oregano, crushed red pepper, orange zest, honey, cider vinegar, kosher
Slt, black pepper, water
Milk, salt, pepper, lemon, Danish bleu cheese
Steps:
Preheat oven, season coulotte, place on raised rack approx. 250 F.
Periodically glaze with green pepper demi
Demonstrate process of curing potatos in herbs
Blanch potatoes in duck fat
Demonstrate pickling onion
Make foam base and demonstrate foam canister
Fry frittes, assemble plate
