(FOX Providence) - This morning in The Rhode Show Kitchen we’re cooking up Slab Bacon, Blue Cheese & Tomato Salad with Chef CJ Correnti of Providence Prime and Providence Oyster Bar.
INGREDIENTS
4 Slices ½ inch thick cut slab bacon
1 Whole Beefsteak or Vine Ripe Tomato
1 cup Gorgonzola Cheese, Crumbled
1 tbsp. Chives Chopped
Salt and Pepper to taste
2 tbsp. Balsamic Reduction
STEPS
Pre-heat the oven to Medium Heat on Broiler setting, with rack at upper third of the oven.
Place slab bacon on rack and cook for 5-7 minutes per side until crisp and browned.
While bacon is cooking slice the tomato into 4 slices and season with salt and pepper.
Chop the scallions and crumble the blue cheese into bite size pieces.
When bacon is done place on platter layering with the tomatoes, top with chopped chives, and crumbled blue cheese.
Finish with a drizzle of the balsamic glaze. Serve immediately.
Serves: 3-4 people, Uses: Breakfast Side Dish or Party Platter
