(FOX Providence) - We're cooking Strawberry Rhubarb Crisp Muffins with Nancy's Fancies.
Ingredients:
- 2 cups Flour
- ¾ cup quick oats
- 1 c. brown sugar, packed
- 1 ¼ tsp baking soda
- ½ tsp salt
- 1/2 cup melted butter
- 1 egg
- 1 cup buttermilk
- ¾ cup chopped fresh rhubarb
- 1 cup strawberries, cubed
Topping:
- 1 cup old fashioned oats
- ¼ cup melted butter
- ¼ cup brown sugar packed
- ½ tsp cinnamon
Steps:
- Mix first five ingredients.
- In another bowl combine butter, egg, and buttermilk.
- Add strawberries and rhubarb.
- Mix in dry ingredients just until moistened.
- Toss together topping ingredients in separate bowl.
- Using an ice cream scoop, scoop muffins into paper lined
muffin tins.
- Top with topping, pat gently to stick to muffin.
- Bake at 350 for approx. 20 minutes until tops spring back
when touched.
