(FOX Providence) - Today we’re cooking Kain’s Cast Iron NY Strip Steak with Lodge Butter and Axe Cut Fries with Bugaboo Creek Steak House.
Kain’s Cast Iron Steak
2 each Raw NY Strips
2 tbsp Worcestershire sauce
2 tbsp Montreal Seasoning
Marinating Steps
1. Rub the steaks in the Worcestershire Sauce. Rub ½ TBSP of Montreal seasoning on each side of a NY Strip steak.
2. Place steaks on a wire rack over a pan or wrap each steak with plastic wrap.
3. Marinate for 24 hours.
Compound Butter Butter
¼ cup Peeled Garlic, Chopped
¼ cup Olive Oil
2 tbsp Lemon Juice
1 cup White Wine
1 pound Butter, softened
½ tsp Tobasco
2 tbsp Worcestershire sauce
2 tbsp Dijon Mustard
½ bunch Parsley, Chopped
Steps
1. Heat oil in a sauté pan over medium high heat.
2. Add oil and heat for 10 seconds.
3. Add garlic to the sauté pan and cook garlic for
20 seconds, do not brown.
4. After 20 seconds add white wine and lemon juice to the pan and bring to a boil.
5. Reduce wine to 2 oz vol or almost dry.
6. Remove pan from heat and set aside to slightly cool.
7. Place Butter in a mixing bowl and allow to soften at room temperature for 1 hour.
8. After 30 minutes combine cooled garlic with remaining ingredients and combine with a whisk.
9. Make sure all ingredients are mixed together well.
Axe Cut Fries
1 Each Whole Baked Potato, Cold
1 tbsp Olive Oil
2 tbsp Cajun Seasoning
Steps
1.Cut the Baked Potato into 4 large wedges.
2.Season each wedge with Cajun seasoning
3.Place wedges on a roasting pan, drizzle with olive oil and bake in a 425 deg Oven for 10-12 minutes to brown.
