We're making Lobster Mac and Cheese in the kitchen with with Executive Chef Edie Banky of Canfield House.
Ingredients:
½ C Champagne
2 C Heavy Cream
4 oz. Brie Cheese (rind removed)
5 oz. Dill Havarti Cheese (sliced thin)
8-10 Fresh Chives (chopped)
6-8 oz. Fresh Picked Lobster Meat
Salt & Pepper to Taste
3 C Campanelle Pasta (cooked)
½ C Crushed Ritz Cracker Crumbs
2-3 Tbs. Grated Parmesan Cheese
Steps:
In a stainless steel pan reduce Champagne by half. Add heavy cream and low boil for a few minutes.
Stir in Brie and Dill Havarti cheeses until melted. Add Chives and lobster meat. Season with salt & pepper to taste.
Toss with cooked Campanelle pasta and fill a 1 qt. Casserole dish.
Top with Ritz cracker crumbs and grated parmesan cheese.
Bake at 400 degrees for 5-8 minutes, until crumbs are golden brown.
