We're making the "Feast of Seven Fishes" with Chef John Granata…

(FOX Providence) - We're cooking Crispy Soft Shell Crab with Heirloom Tomatoes, goat’s milk feta, mixed olives, and Greek vinaigrette with Chef Jason Santos from Gargoyles on the Square .
INGREDIENTS: (Serves 4)
Salad:
8 ea cherry tomatoes
4 ea heirloom tomatoes
8 ea minced pitted olives
2 tbl minced pepperoncini
1 tbl. fresh chopped parsley
1/4 julienned red onion
1/4 cup sliced English cucumbers
1/2 cup diced goat’s milk feta

Vinaigrette:
1/4 cup extra virgin olive oil
1/4 cup canola oil
3 tbl red wine vinegar
3 tbl water
2 tsp dried basil
2 tsp dried oregano
2 tsp garlic powder
2 tsp black pepper
2 tsp onion powder
2 tsp Dijon mustard
1/2 tsp salt
Whisk all ingredients except oil then drizzle in oil to emulsify.
Soft Shell Crab:
4 ea soft shell crabs, cleaned
1/4 cup buttermilk
1 cup flour
2 tsp old bay seasoning
canola oil
