We're making Confetti Burgers and corn on the cob with Indianapolis Colts player and East Providence native, Jamie Silva.
Confetti Burgers
Yield: Makes approximately 5 burgers
Ingredients:
1/2 cup diced Red pepper
1/2 cup diced Green pepper
1/2 cup diced Yellow pepper
1/2 cup diced Baby portabella mushrooms
1/3 cup fat free Feta cheese (or cheese of choice)
20 ounces Ground turkey
Salt and pepper
Olive oil
5 rolls
Steps:
In a medium sized pan, heat olive oil over medium heat and add diced peppers and mushrooms. Season with salt and pepper. Cook until soft. Approximately 7-10minutes. Let cool.
In a bowl, mix turkey, feta, cooled veggies and salt and pepper. Gently mix until evenly combined.
Form into five patties. Heat olive oil in pan over medium heat. Place patties in and cook all the way through. Approximately 10 minutes. Flip frequently.
Remove and place on toasted rolls. Serve immediately.
Fire Cracker Corn
Ingredients:
Corn on Cob (shucked)
Limes
Chili Powder
Sea Salt
Steps:
Grill corn til brown all over.
Cover in lime juice.
Sprinkle sea salt and chili powder to taste.
