We're cooking Chipotle Shrimp with Perro Salado .
Ingredients:
2# medium size shrimp
2 Tbl olive oil
1 cup diced tomato
1/4 diced onion
2 Tbl chopped cilantro
2 Tbl chipotle puree
Juice of 1 lime
salt & pepper to taste
Steps:
Flour tortillas for serving
Lime wedges & cilantro for garnish
On stove, heat oil in large skillet til smoking hot
Add shrimp to pan, sear on one side
Turn shrimp, immediately add onion, tomato, cilantro, chipotle puree & lime.
Continue cooking till shrimp are cooked thru and well coated in sauce.
Turn onto platter, garnish with lime wedges and cilantro
Serve with warm flour tortillas.
