Bison Nachos and Red Rock Bison Burger

(FOX Providence) - We're cooking Bison Nachos and Red Rock Bison Burgers with Micah Baumstein from Ted's Montana Grill in Cranston.

RECIPE #1: Bison Nachos

INGREDIENTS:
Fresh Corn Tortillas (As needed)
Kosher Salt (As needed)
5 oz. Tortilla Chips
2 oz. Grated Pepper Jack
2 oz. Cheese Sauce
4 oz. Bison Chili
2 Tbsp. Diced Tomatoes
2 Tbsp. Sliced Green Onions
5 each (1/8”sliced) Fresh Jalapeno Slices
2 oz. Sour Cream

STEPS:

  1. Using a chef knife, carefully cut the tortillas in half, and then cut each half in half. Resulting in four equal-sized pieces.
  2. Place the cut tortillas into the fryer and cook at 350º F for 30 seconds. Stir often, to ensure the chips do not stick together while cooking.
  3. Once the tortillas have completed cooking, drain the tortilla chips of excess fryer oil.
  4. Lightly season the tortilla strips with four shakes of Kosher salt.
  5. Place 5 oz. of fried tortilla chips in the center of a large round plate, building vertically.
  6. Sprinkle the 2 oz. of grated Pepper Jack cheese all over the tortilla chips.
  7. Ladle 2 oz. of cheese sauce on top of the grated cheese and tortilla chips.
  8. Ladle 4 oz. of bison chili on the chips ensuring adequate coverage.
  9. Top the bison chili with 2 Tbsp. of diced tomatoes. Tomatoes are cut to 3/8”.
  10. Top the bison chili and diced tomatoes with 2 Tbsp. of sliced green onions.
  11. Place 5 fresh 1/8” sliced jalapenos randomly on top of the sliced green onions
  12. After setting for 3 minutes, place a 2 oz. dollop of sour cream directly in the center of the nachos.


RECIPE #2: Red Rock Bison Burger

INGREDIENTS:
8 oz Fresh Bison Grind
Ted’s Seasoning (As needed)
1 Ciabatta Roll
Butter Substitute (As needed)
1 ½ oz. Grated Pepper Jack Cheese
1 tsp. Diced Jalapeno Peppers
1 tsp. Chopped Cilantro
1 oz. Fried Onion Straws
1 tsp. Z-Sauce

STEPS:

  1. Weigh out 8 oz. of bison
  2. Put 1 ½ oz. of grated Pepper Jack cheese on the center of the burger
  3. When the cheese is fully melted (generally 2 minutes), remove the burger from the grill, and place on the center of the toasted bottom bun.
  4. Spread 1 tsp. of diced jalapenos on top of the burger.
  5. Spread 1 tsp. of chopped cilantro on top of the diced jalapenos.
  6. Stack 1 oz. of fried onion straws on top of the cilantro and jalapenos.
  7. Spread 1 Tbsp. of Z-Sauce over the surface of the top portion of the roll, ensuring the entire surface area of the roll is evenly covered.
