We're making baked chicken and eggplant and penne casserole with Chef/owner Billy Manzo of Federal Hill Pizza.
Ingredients:
7 chicken cutlets
15 pieces of breaded eggplant
3 cans of tomato sauce (kitchen ready etc. Use as your liking )
Fresh mozzarella 3 lbs.
Penne 1lbs.
Fresh 1 oz of garlic
1oz salt
1/2oz. Pepper
And 4 oz of fresh basil
Steps:
Take all the ingredients and build and level chicken mozzarella sauce and then basil, do the same with penne and the eggplant side, divide the pan in 3 parts and bake off for 30 minutes.
Use for dinner, lunch of use a a part with the pasta for a real fast dinner! Merry x-mas! And Happy Holidays!
